Cuisine American
- ¼ cup butter melted
- ½ cup unsweetened applesauce
- 2 eggs
- 1 teaspoon vanilla
- ¼ cup sugar
- 2 medium apples grated or chopped fine
- 1 ½ cup flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ teaspoon cinnamon
- ½ cup cinnamon baking chips
Preheat oven to 375°F.
In a large bowl, mix the melted butter, applesauce, eggs, vanilla, sugar and grated apples.
Add the flour, baking soda, salt and cinnamon, and mix until just a few streaks of flour remain.
Add the cinnamon chips and fold them in just until no flour streaks remain. Be careful not to overmix.
Scoop the batter into a mini muffin pan and bake for 4 minutes at 375°F. Then reduce the oven temperature to 350°F and bake about 6 more minutes, until the tops are lightly golden and bounce back when pressed. (The change in temperature helps the muffins rise more without burning.)
Apples: I usually use honeycrisp apples, but really any apple will work. Use what you normally have on hand.
Freezing: These will be good in the freezer for up to 3 months. Freeze them in an airtight container. To reheat, pop them in the microwave for about 30 seconds from frozen, or let them thaw on the counter.
