S’mores Protein Balls

I loved my Scotcharoo Protein Balls so much that I wanted to make another healthier treat option, and these S’mores Protein Balls were born! They have all the flavors of a campfire s’more (graham crackers, marshmallows and chocolate) packed into a no-bake protein ball. Honestly, they taste like cookie dough!

Why You’ll Love These S’mores Protein Balls

  • All the s’mores flavor, no campfire needed.
  • No baking required and they come together in minutes.
  • A healthier treat with protein powder, peanut butter and oats.
  • Great for meal prep: one batch makes about 40 balls, and they keep in the fridge for up to 7 days or the freezer for up to 3 months.

Ingredient Notes

  • Protein powder: vanilla or toasted marshmallow flavored protein powder both work great. Clean Simple Eats is my favorite brand.
  • Graham crackers: roughly crush them so you still get little bits of graham cracker in every bite.
  • Dehydrated mini marshmallows: these are the tiny, crunchy marshmallow bits, like the ones you find in hot cocoa mix. You can find them near the marshmallows in grocery stores or order them on Amazon here.
  • Mini chocolate chips: the mini size spreads chocolate throughout every ball.

Tips for Perfect Protein Balls

  • Use a stand mixer. The mixture is thick, so a stand mixer makes mixing so much easier. A large bowl and a sturdy spoon work too!

  • Use a small cookie scoop so all of your balls are the same size. I use the small scoop from this cookie scoop set.
  • Line your baking sheet with parchment so the balls don’t stick.

How to Store S’mores Protein Balls

Store them in an airtight container in the fridge for up to 7 days, or in the freezer for up to 3 months. They’re perfect for grabbing a quick snack all week long!
